Juicy, fatty brisket. Tender beef ribs. Delicious Frito pie, if you're into that sort of thing, that stats just the right level of crispy, and isn't over cheesed as they so often are.
The sauces are solid, although I wouldn't list them as all time favorites. The spicy is tangy, but not actually as spicy as I would have expected. The Carolina actually tasted under-vinegared to my taste. The mustard was the best of the bunch; just a solid workhorse of a sauce.
Had brisket, mac-n-cheese, and potato salad.
I disliked the potato. It was unexpectedly spiced with some strange flavors (Mediterranean or Indian? I don't really know my cuisine from those regions so not too sure).
The mac-n-cheese was okay. It had a lot of cheese, but didn't taste very cheesy. Not bad, but not great.
The brisket is the savior. I do know my smoked briskets and it was REALLY good. It can compete with the best of the central Texas BBQ. The pit-master did an amazing job!
Let's talk about smoked meats. Smoked meats is a category of food that requires care, patience, knowledge, experience to master. Slab has done this. I was blown away by the smell the moment I walked in the door. You could just tell it was going to be good. Then the simple questions when ordering brisket, wet or dry. This ominous questions is actually a key indicator that they know what they are doing. Wet for the fatty side of the cut. Get that. Get a side of ribs, the spare ribs are perfect. Free pickles too, damn this is how smoked meats is supposed to be. Enjoy, I highly, highly recommend.
Awesome place with awesome employees. The person who has helped us was very helpful and the menus are simple to choose. Since they only had beef ribs when my girlfriend and I were there(others were sold out) we didnt have much choice but to order that. And it was very tender and not so dried. Coleslaw was a bit dull but mac and cheese was decent. But pricey.
Tony's Ribs... ????????♀️ I love glazed sweet ribs. Definitely a preference, and I loved these! The smoked ribs and chicken were also delicious. The Brisket... Truly a labor of love! Moist, moist, moist. Tender. If your a brisket fan, A MUST. Wasn't crazy about the sides... we ordered mac n cheese, coleslaw, collard greens, and corn on the cob. The best for me was the collards. The ice tea doesn't have sugar, so don't expect sweet tea. It isn't. Overall, great service and good meal. Would definitely go back.
