Best vegan pho I've ever had, hands down. I'm not local and this place had me visiting every single pho spot in my city for pho this good, and nothing came close. Good customer service too!
Great new addition to Fallbrook. I stopped in for some quick take-out. They have a robust menu filled with a variety of delicious dishes I can't wait to try. I ordered a few things, the Bánh Mì sandwich, Chicken Pho, House Special Vermicelli - Bun Dac Biet, & a Boba tea.
The Bánh Mì sandwich had all the key characteristics of a great Bánh Mì sandwich. The bread was was warm with a crackly crust and a soft, airy interior. The pickled vegetables were fresh and flavorful, which add just the right tanginess and crunch. The pork was seasoned and perfectly cooked.
The Chicken Pho was delicious. The foundation of good Pho is its rich, aromatic broth simmered for hours giving it a deep rich layered flavor. They checked that box. Add in a large protein serving, perfectly cooked rice noodles, fresh basil, cilantro, bean sprouts, onion, jalapeño, and a squeeze of lime and you got yourself a harmonious balance of flavors – savory, sweet, spicy, and sour.
Last the House Special Vermicelli - Bun Dac Biet. Served with a variety of proteins - chicken, pork & shrimp, an egg roll, a small salad, served with a side of dipping sauce. The vermicelli was perfectly tender, the meats were well-seasoned, marinated, and grilled, and the sauce adds a tangy, sweet, and savory element to the dish, tying all the components together.
The Boba tea was great. They gave me half Boba and half Jelly,
We enjoyed our meal. The staff was welcoming, friendly, and the food flies out of the kitchen. I look forward to going back and trying more items on the menu.
For those who reviewed this restaurant right after it opened, all new restaurants struggle a bit in the first couple of months. It takes a little time to get timing, quality, and consistency together. Give them another try and update your experience.
Food was alright. Good but nothing to write home about.
If you order a drink be sure to ask for half ice. I ordered a Thai tea with boba and the drink came out 90% ice. I barely got any boba because it was trapped in the ice.

* Rare Steak Pho: Very generous portion. Broth had just the right amount of seasoning and the sliced steak was tender.
* Service: Not to be beat. Friendly and welcoming. The wait staff is happy to go over the menu with you and provide their recommendations.
If you're up for a night out to dinner you can't go wrong with Pho Bomb.
