    Visited near twelve, it was not full. The bill was reasonable. This place has great reviews for a reason.

    Reviewing a Michelin 3-star restaurant is not a simple "what great food!" kind of review. Because it's more than just the food.
    I'll start with the crucial part - Yes, the food is excellent. I've been to several 3-star restaurants, and Saison is one of the best (but... not the best one). From start to finish, the whole experience takes about three and a half hours so come prepared.
    Important to recognize that about half of the dishes are based on sea products or fish. That's where we came ill prepared. My wife doesn't eat fish, and when making the reservation, we asked to replace the sea product for her as much as possible. That's not a good idea - For the price you are paying, substituting fish for vegetables, while delicious vegetables (BBQ carrots for the win), it's just not worth it, and my wife's experience was less enjoyable than mine. That's not Saison's fault of course, just know that it's better to have the menu as is and not "play" with it.
    So, back to the food - 8/10 - Produce is fresh and masterfully prepared. My only issue with it is that it didn't feel unique enough. I know I'm being picky right now, but my previous 3-star restaurant visits always had that "wow" factor when you taste the food. In some cases, the course can be made from basic and familiar products and still surprise you. That is not the case here - While delicious, there is very little "wow" factor. That might be good for some, as not everybody enjoys surprises, but I expected more.
    Service - 8/10 - It's a 3 Michelin star restaurant, service is top notch. From the moment you come in, and to the way the dishes are served, it is a show, and you are the king/queen. Two things that bothered me (again - super picky) - Our waiter would come, quick chit chat, will ask a question and leave without hearing our reply. I understand it's not an easy job, and people are mostly annoying, but there were several times when it just made me feel like it's too... fake, I guess. The other part is that we were not given the menu (which I know is not unusual), but it was difficult to know where we at and how close we are to desserts. We felt like we needed a "map," but we only got it by the end of the meal.
    The ambiance 10/10 - The place is impressive. We got a table closest to the kitchen, and that is the real "wow" factor here. Seeing and hearing this almost army-like discipline is a fantastic experience. We were given a tour through the kitchen after our meal was done and I enjoyed every second of it. To be able to see the Chef and say "Thank you" in person makes it a rare experience which I enjoyed tremendously .
    So here it is. Is it worth it? I would say "Yes". It's not the best place I've been, but it does offer a unique experience, even if not it's not the uniqueness of its food.

    Absolutely amazing meal. Did the wine pairing with the food, and it was spot on. Excellent experience, fantastic service, and well worth the money spent.

    Beautifully made and thought out dishes. A real specialty even among 3 Michelin starred restaurants. The service team was second to none! Great job!

    Spectacular. From the moment we stepped through the front door our experience couldn't have been more spectacular. The whole staff were great. The food was spectacular. The wine list spot on. Wouldn't change a thing. One of the most spectacular dining experiences enhanced all the more by an amazing team.
