    Worth the wait! Only knock is that it’s not open on the weekends.

    Probably the best Thai Food you’ll find in Colorado. Not just for a food truck, but even compared to sit down restaurants.

    The food is amazing, serving size is ginormous, and prices are crazy affordable.

    Wait can be long though since everything is made to order and he can only cook up to two dishes at a time. Because of this, you’re limited to one order per person (but can order two servings of the same dish).

    Best pad Thai and/or drunken noodles in town. Bar none. Always a line so be prepared to wait about 39 min for you order, but it's only one guy making everything in a small trailer. Trust me though... well worth the wait. And great size portion for great price. Everyone must try.

    Liang is the hardest worker on 16th Street. And his Thai food is delicious. Don't know how he does it in the tiny truck, but he works fast to keep the line moving.
    Love the pad Thai. Classic drunken noodles. Yum!
    Warning: He makes it spicy ????
    Huge portions made fresh

    Jpop is one of the hardest working people I have ever met. He runs this stand by himself, day in day out, no matter the weather, 10+ hours a day. The food is phenomenal, but I won’t tell you what his best dish is because I don’t want it to get so popular that he runs out of supplies for it every day! OK, fine: it’s the Thai Ginger, extra vegetables + extra spicy. Folks also love his Green Curry and Drunken Noodles.

    Some reviewers on here hold it against him when he takes a day off (aka, the cart is not there when you think it should be) or when they wait in line and the particular dish they ordered didn’t blow them away. As the only person running the cart, yes, he need a day off here and there and yes, he is human and does occasionally get sick. If the dish you ordered doesn’t blow you away, don’t hold it against him. Of the 10 or so items on his menu, not all of them are going to be the best you have ever had. Keep trying, and you’ll definitely fall in love with something he cooks, I promise!

    The wait can get a little long if there are quite a few people in line as he makes each dish to order for each customer as they come to the window. However, it is worth the wait. The food is so flavorful and delicious. Nice big portions and can easily be made into multiple meals or shared. Not to mention the owner is extremely nice.
