Cowboy Star Restaurant And Butcher Shop

Went here for an early Valentine's Day date with my husband. Our waitress was incredibly sweet and attentive. My husband let her know we wanted out meal spaced out a little, and she did a great job with the pacing. They have a varied selection of appetizers, and great cocktails. My husband got the wagyu steak, and they actually brought out the cut so he could see it before they cooked it. We were really impressed! At one point, I was telling my husband I needed to go to the bathroom and the manager (I assume?) had been nearby and I guess read my lips because she stopped over and explained she overheard me and pointed me down the hall. It was very sweet, and everyone who served us was so lovely the entire time. The food and service was exceptional, we will definitely be back for another special occasion sometime soon!

Don’t want the secret to get out as we love visiting this place often. Service is great! Same kitchen and wait staff since the place opened...which is impressive these days! Drinks are creative, steaks are some of the best in town, and the desserts are all delicious. Cowboy Star is our favorite, and I hope it doesn’t get so popular we can’t get a table anymore!

Absolutely amazing dinner. Came here for our 5 year wedding anniversary and they were SO thoughtful. Exceptional service, and the best steaks in CO Springs. We will definitely be coming back! Wonderful experience.

This restaurant was outstanding! It had a old fashioned yet modern interior design. The staff were incredibly nice, and didn’t mind answering a question. They brought us delicious samples and they were all well timed. We ordered an appetizer of bacon with a bourbon peppercorn glaze that was absolutely amazing. Then for the main course, I ordered a delicious 12 ounce New York strip that blew me away. With our main course, they brought snap peas with bacon that were maybe the best vegetable I had ever eaten. For desert we went with their signature chocolate chip bread pudding, that was not only delicious, but also the perfect way to end our perfect meal.
