    This was almost a '4'

    I enjoyed the feel of this eatery, and the nice casual atmosphere. The food was good, but just good. I enjoyed my pulled pork sandwich, but had to put quite a bit of sauce (eastern carolina was my poison of choice) for flavor. I've not slow-cooked pork more than 5 or 6 times in my life and I swear the last two had more natural flavor than this.

    Perhaps this was the intention so the guest can choose their flavor (there were 4 different available sauces), but I just expected a little more flavor from the start.

    No 3.5 option?

    The staff were very friendly and prompt! The food took a few minutes to come out, but they have beer for the wait and plenty of interesting things to look at inside. We ate outside and it was pleasant.

    Really 3.5 stars. Here's the thing about Wilson's: it can be inconsistent. When it's good, its very, very good: Pulled pork that is both tender and has perfect bark. Ribs that are flavorful and meaty. Brisket that is glistening and juicy with a succulent smoke ring and just the right amount of rub. But then there are the times when the meats fall short, for whatever reason. Sometimes they don't quite reach their peak, and sometimes, I'll be honest, its just not that good. It's a bit maddening, since I read the reviews, both positive and negative, and can see where both are coming from if they get food on either end of the quality spectrum. Wilson's is capable of great BBQ. I just wish they would be more consistent in making it.

    My wife and I drove over 3 hours from New Hampshire to try the place out after seeing it on DDD. We would do it again in a heartbeat. The brisket was tender juicy and hot with good bark. The chicken was moist with a nice spice in the skin. Pulled pork was great . We had mac and cheese on the side that did need a little salt but had great texture. Collard greens were terrific. Homemade pickles and cornbread were top notch. The wife and I washed it all down with a couple of pabst blue ribbons. Surroundings had a great backyard barbecue feeling. Tables were supplied with large rolls paper towel and 3 large squeeze bottles full of different barbecue sauces and a squeeze bottle full of ketchup. Wilson was there with his right hand man cooking away working the magic. Couldn't have been a better experience. All the food came nice and hot but it does cool off fast, can't see where that the cooks fault. So take the sticks out of your backside and relax and dig into some good barbecue.

    I love this place! I have gone here about 6 times. I went there this past Saturday and got the full rack of baby back ribs. The sides were amazing and so were the ribs! I liked how the owner was there making sure everything was running the way it was supposed to. I will definitely be back!
