Proof Kitchen and Cocktails is an absolute must-try if you're in the Star/Meridian area. From the moment you step inside, the warm, inviting atmosphere makes you feel like a regular.
The menu is outstanding, with a focus on locally-sourced, seasonal ingredients from farmers and purveyors in the Treasure Valley.
But you can't leave without trying one of their craft cocktails! I had the "43 Revolver" with local Seven Devils Whiskey, that was so refreshingly unique. They even have an entire "Zero Proof" mocktail menu for non-drinkers
What really sets Proof apart is the incredible attention to detail and focus on sourcing the highest quality local ingredients. The chef/owner Bryan has created such an exceptional yet unpretentious dining experience. The food is absolutely to die for. So don’t miss out!
As a native, I'm so excited that there are so many new restaurants that are popping up, and always make it a point to try something new.
I was very enticed by the descriptions on the menu, that's what I look for, and had many things that I wanted to try!
We ended up getting a few apps for lunch: the Proof Stone Bread, the Loaded Potato Spring Rolls, and like a soup of the day with a salad.
The Stone Bread was really good and I enjoyed the warm mashed potatoes in the spring rolls 😋. The soup was a clam chowder, and that was also really good.
Overall, I loved the service and the atmosphere! The food was tasty and high quality but felt it just needed a little more to be exceptional.
This by no means is meant in a bad way, food tastes are subjective and I would still recommend swinging in and giving it a shot to see what you think! If in the area I would definitely go back.
Be different and try something new :).
Proof has a fun selection of unique pizzas. Have tried several of them. The best part about their pizza is the crust -- it has a nice chew to it.
In regards to the restraunts atmosphere, it would be wonderful if they turned down the music. It is so incredibly hard to hear people while eating our meals.
First time going here and it was good. There was a wait...15-20 min. Not horrible for a Friday night though. First time having Whiskey Fries and I love them! They remind me of Poutine, which I love, without the cheese curds. I had the Prime Rib Dip with a Cesar salad side; both very good! The place itself is not large, and when it's full it's kind of loud, but it wasn't unbearable. I'd definitely go again. (The picture is of the Whiskey Fries... Forgot to get the food ones.)
Checked out this place recently with friends. We ordered a margarita & Moscow mule. These were typical for these drinks, yummy! For dinner, the 3 of us ordered pasta entrees. I ordered the Veggie Pasta. I was excited about the asparagus being in this dish instead of their online menu which says it features broccoli. The asparagus & kalamata olives were a great add into this dish. The dish itself was pretty dry though & it had SO much garlic in it. It was very overpowering, especially because it was so dry. I didn’t eat much of it & ended up taking it home & adding marinara to it. The garlic in this dish was still very overpowering. I’m not sure I would recommend this dish. Next time I would probably opt for a pizza instead. One friend ordered the chicken alfredo. The sauce to pasta ratio was better for this dish. My friend sub’d out the noodles for gluten free penne. It’s always nice when companies have the option to do this substitute. My other friend ordered the chicken Bruschetta pasta. I did try this, the sauce was pretty good, it does have a hint of spice to it. Both dishes came with boiled chicken. Both friends did not care for the chicken & mentioned it would have been better grilled with some seasoning. It was just too plain & rubbery. I would probably go back, but pick something different. We were all in the mood for a pasta kind of night & it wasn’t as good as we thought it would be. But their pizza looked pretty good from the tables around us that were ordering that.
