Cheli is a super nice human being, and having a shop in Wichita that is this specialized is rare. They usually don't last, but he's been here for almost a decade, so that should tell you something.
It's Mexican.
It's Mexican seafood.
It's *regional* Mexican seafood.
While I've never been to that specific region on the mainland, I've been to nearby Baja. Without doing a bunch of research, but based on experience watching coastal cuisines for 30+ years, I'll vouch for its authenticity.
The shrimp ceviche was fresh, bright, flavorful, and with generous portions. Just lovely overall.
I will definitely be back to try the whole roasted fish!
