“As a kid my family would drive from Omaha to Hays, KS and Otis, KS to visit relatives. Foote Cafe was one of our go to stops for lunch. You could get a good burger and pie there. Some don't remember that Highway 81 used to go straight through town right past Foote Cafe. For some reason the roads department moved 81 to the east around Chester, probably to save the need to slow down in town. But the loss of the spur of the moment stopping traffic for food and gas really hurt the cafe.”
