My first time there today. The staff were not only knowledgeable, but they were nice and friendly. They treated me like I've been a loyal customer all my life on my first visit, and that says a lot. Also, they remembered my single phone call from last week when I mentioned I needed a rump roast sliced for beef jerky, which they do, and they do excellently! When the first slice was made, I was asked if it was the right thickness, and it was spot on!
Because they were so nice, and they sliced up 4.6 pounds without complaint, here's the Jerky recipe that has been in my family for a long time, and is very -very- low on sugar, enough so that it's diabetic friendly.
For every 2 to 2.5 pounds of thin sliced beef (rump):
1 Gallon Zip Lock Plastic Bag
1.5 Cups Beef Broth
2 Tablespoons Soy Sauce
2 Tablespoons Worcestershire Sauce
2 Tablespoons Minced Garlic
1 Teaspoon White Pepper
1 Teaspoon Smoked Paprika
1/2 Cap of Liquid Smoke

Put all ingredients into the Gallon sized Zip Lock Plastic bag. Shake it up to mix some, about a good 15 seconds back and forth.
Add 2 to 2.5 pounds of thin sliced beef. Seal bag and shake it some more to distribute the marinade. Put in Fridge for 24 hours. Remove beef and press dry so it doesn't drip. Use in your favorite dehydrator, as these devices can vary, check your manufacturer's booklet on how long to dehydrate beef strips.
I can promise you a surprise. At first bite, you might not feel overly impressed, but as you chew on it, flavors get released in waves. The longer you chew, the more crazy good it gets. The White Pepper holds a nice spice-filled build up that is not overpowering. Plus, you actually taste the flavor of the beef too, it's not so seasoned up that the beef flavor is completely overpowered.
Again, to the folks at Bill Kamp's, thank you ever so much. You've won me over for life, I'll be back for more. ^_^
The spiral ham I ordered was amazing, flavoring just right. I'm glad that for the first time I had ham that was not overly salty or dry. The reason I didn't give 5 stars was because the desserts were just okay. I ordered the chocolate bourbon pie and the apple cobbler. I've had the bourbon chocolate pie before and I was disappointed that I barely tasted the bourbon on this one. They must have changed the recipe because the consistency wasn't even the same. The apple cobbler had a good flavor but the crust was tough and chewy (and a lot smaller than I expected). I paid about $30 for both desserts and I wish I had saved that money to buy other stuff. I tasted the blueberry lemon cake while I was there and that was amazing so I had my hopes up for the ones I ordered. The staff was super friendly, I had a good buying experience.
