Gibby's consistently has great food. We have yet to try anything that we haven't liked from there and we look forward to meeting friends there weekly. I wish they had a location closer to our office as well.

Being a South Louisiana lady, Lafayette to be exact, these talented and amazing chefs bring home every wonderful, dripping, soulful, flavor there is!!!!! I am an awful harsh judge and they would have my mama running to eat! The spice and holy trinity are perfection! There is not a bad dish on the menu!!! My children (bless their hearts)ask to go nightly! I’m so excited they are in Collinsville, it is a true southern treasure! The staff is amazing, it is tidy and cute (small in size=large in flavor)!!! It’s a must for lunch or dinner!!!!

I was recommended to come eat here. I decided to have the Fried Shrimp PoBoy with the Fries. I can for sure say it is the bomb. If your passing through or just on the outskirts you should try this place. They have a wide variety and specials each day. Would 100% eat here again.

Tried this place for the first time this evening and was very impressed! The fried shrimp Po Boy was delicious, fried catfish was great, and the sides were outstanding. Very nice to have a local joint that understands what down south Cajun food should taste like and all the staff we met were very kind and helpful. Will definitely be visiting again soon!
