    Short take: delicious vegetarian food that even the mega-carnivore will be happy with. Must try.

    Long take: Today is "Meatless Monday", a typically sad day for this Ron Swanson disciple. My darling fiancé brought me a vegetarian bowl from Happenings and its making me question my red meat, bacon wrapped dietary beliefs. The veggies are fresh and grilled to perfection. The seasoning their grill imparts on the veggies could stand against the best grill taste on any burger I've had in Oregon (and I've had quite a few...). Combined with the black beans and cheese, I'm having a hard time accepting the fact that this delicious meal is vegetarian.

    There were more vegetables than I can identify in this delicious, hot, and jaw-droppingly nutritious meal. I'm a big fan, and Meatless Mondays just became exciting.
