He sold to a young relative and this guy is trying to save money....substituting alot of onion in place of more expensive vegetables. It will hurt the business eventually as word is getting around that it's not as good as it used to be.
Update: Just visited today (3/20/18) and see a big improvement! Good balance of vegetables is back and quality improved. Was very good after having initially fallen off in quality upon new ownership taking over. Will return.
