La Canasta Taco Co.

This food truck sits at the corner of Blanco and Arroyo Vista and they're cranking out these specialty tacos along with a couple of other items: regular size tacos and quesadillas.

They have 5 fillings to chose from: shredded beef, chicharron, potato, beans, and cheese. We wanted to try them all so we opted for a Personal Pack (a canasta taco of each filling) for each of us. They cranked these out pretty fast and we hurried home to devour them. It was hard resisting the urge to eat then on the road.

Got home, opened the foil wrapped and stared at the goodness. These tacos where thin and beautiful stacked one of top of the other. Where to start?? Decided to start the the top with the cheese taco. Then the shredded beef, follows by the chicharron, the the potato and finishing with the bean.

The Personal Pack comes with a couple of salsas and instead of lettuce and tomatoes for adding to your tacos, they include shredded cabbage, onions and carrots which gave the tacos a spectacular crunch to contrast the soft fillings. All these soft, corn, tacos were excellent but my favorite was definitely the potato. Definitely reminded me of my childhood growing up Mexico.

These tacos may look small and thin, but they're definitely filling. Tacos de canasta are not your typical texmex tacos you've come to expect but I'll tell you this, they'll quickly become your favorites.

My daughter saw this food truck in front of Nimitz HS, she went and got one of the best tacos she's ever eaten. Prices are great too!
