    Imagine the following —

    You are from the Upper Valley and are stuck in Brownsville for the afternoon. You start to get hungry and are overwhelmed by all the options when you spot an orange truck promising “Real. Good. Food.”

    You excitedly rush to the counter (because you are a fan of food that is both real and good). At this point, you aren’t just hungry — you’re starving, and this humble food truck has drawn you towards it in a way that can only be described as magnetic.

    I do not have to imagine this scenario. I was in this very position today, and this is my story.

    The line was not long, despite the truck’s popularity. Everyone got their food very quickly. When it was my turn, I realized every option was glorious and could not choose just one. Thankfully, Rianna helped me decide which to order and I was not disappointed!

    Till today, I was a heretical man. Till today, I did not like chives. Till today, I did not think a potato fry could change my life. Till today, I did not try Papas a la Carte’s loaded fries.

    When I tell you every bite was magical, every cut of onions was beautiful, and every drop of sauce worthy of tears, I mean every word. My only regret is not ordering another.

    I used to think of having to drive to Brownsville as a chore, but because of Papas a la Carte, I will now think of it as a treat.

    Crispy, fresh, and cooked to perfection, this place has got it down! For a place that focuses solely on chicken and fries, there’s so many flavor combinations with all the sauces and toppings that there’s always something new to try. This time i mixed the creamy cilantro and special sauce for one, but couldn’t help getting the favorite “Harambe”! Can’t wait to come back

    Yummmm! Fries and chicken are good! Sauces are delicious! I got a variety of sauces on the side and all were really good! I also tried their soda slush and it was just what I was craving! I wasn’t able to poke the hole with the straw, maybe a stronger or pokier? Lol straw is needed, I had to rip the top open to stick the straw in but it was good!

    Family and I traveled from Harlingen to give this a try! It was great. I got the 956, let me tell you this was so tasty. If you like hot cheetos or takis with cheese this will be for you! The chicken was crispy and super tasty! Fries were a delicious plus!
    Oh and let’s not forget about the cherry limeade slushie that was another 5 stars itself!
    The service was great from the start they will help you out with any questions you have and you can sample a sauce if you don’t know how you would like it. Highly recommend giving them a try!

    Brought my brothers from out of town for the Grand Opening. Tried a little bit of everything, The Slushies, The Middle Child, and the SWEET Papas! Definitely worth the trip! Can't wait to bring the rest of my Family!
