Good brisket and ribs. Very tender. Potato salad was good, but it was sweet for some reason. I prefer it not sweet.
Mark Thomas at Jazs Bar-B-Que (named after his granddaughters) is smoking some kickass ribs with hickory, pecan and oak in his smokers behind the small shack just off the main drag in Gainsville. There's no inside seating but the one table outside is shaded, good thing because it was 105 degrees the day I stopped in. The bark on the ribs was excellent and the bones came out of the meat with just the right amount of force, soft but not soggy. He also makes his own homemade sauce that was tangy and good.
These are some of the best ribs I've had in north texas, when I asked Mark what his secret was he simply said "I just throw em on there".
