In a windowless back room of Revolver Taco Lounge, there is a microworld, one so removed from buzzy Deep Ellum that the exit signs are the only clue you're not in Mexico. There, Chef Regino Rojas (with an assist from his mom and aunt) turns out dishes for fourteen diners per seating. You don't get to pick any of the eight dishes you'll have, which is really a relief because I don't know how you'd choose. The albondiga soup, a specialty of the chef's native Michoacán, had more flavor than a broth rightfully should. There was also a corn patty, topped with veggies and a sauce reduction, that dates many centuries back to Pre-Colombian days. The fork-tender lamb shoulder arrived with a blanket of mole, and when it did, it brought all conversation in the room to a halt. If you go, your dishes may be different, but you'll be treated to some of the best Mexican food you're likely to find anywhere.

Intimate, delicious, and authentic, this is the best dining experience in Dallas.

Upon walking though the door at the back of Revolver you are transported into a Michoacan kitchen with a grandma diligently making tortillas as her son welcomes you in.

The food was amazing; all 8 courses were interesting and vibrant. They ranged from pheasant mole to a pasta dish with octopus and a decadent amount of black truffle. The dishes are gorgeous and varied.

All of the dishes and their influences are thoughtfully explained, and you'll leave knowing more about Michoacan culture.

It's 120pp and worth every penny. The drinks run about 12 and see served in terracotta earthenware. Their mezcal menu is long and they will gladly pair for you.

The service is excellent and completes the experience perfectly.
