    The brisket (I had "flat") was excellent - thick bark and juicy meat underneath. The fried okra and french fries were yummy, too, and I'm too that the apple cobbler was good, too.

    Very overrated BBQ. It's OK, jalapeno sausage is very good (they don't make it though), but it is not the be all end all of BBQ like most around here think it is. Read the Texas Monthly article about their "show pits". Natty Flat's on 281 or Hammond's in Glen Rose are both much better.

    Doesn't get much more Texas than this. Just point at what you want and how much of it. You pay by the pound. You almost feel out of place without a cowboy hat, so much so that it surprised you to see cars instead of horses when you walk outside and then you wonder how much CO2 all these big white pick up trucks put out and you realize that global warming is a result of being told you're not American enough. But what's really more American? A big truck with giant smoke stacks for exhaust pipes or a more environmentally conscious car that says you care about the future generations of Americans and the natural beauty of the land we love?

    I ordered a 16 ounce rib eye and a baked potato and when they brought it to me I unwrapped the backed potato and cut it open to put butter in it and it was rotten and so I exchanged it for French fries and the girl behind the counter wanted to give me the ones that had been under the light and I don't know how long they had been there and I said no,I wanted fresh ones ,so they cooked me some and brought them to me and some of them wasn't done. And they are way too pricey on their little cups of banana pudding, you don't get that much,its good but not $18 for 4 cups.

    As far as Texas BBQ goes, it doesn't get much better than Hard Eight. Their pork ribs are super tender, juicy and fall off the bone. The flavor of the meat is exquisite on its own, but if you're a sauce person, their regular sauce is also really great.

    I also had the pork jalapeno sausage (because I like it a little spicy) and it was pretty good, but couldn't hold a candle to the star of the show, those ribs. The spicy sauce was a little lackluster, neither all that spicy not very flavorful, but when the meat tatses this good on it's own, it's easy to overlook.

    The staff was most helpful and courteous, especially to a first timer like myself. I only managed a few good bites of everything before the manager came around and checked in with me as well. A nice touch for sure.

    If you're ever passing through, or happen to be in the area, don't pass up Hard Eight. You won't possibly regret it.
