Hays County Barbeque Restaurant

I came to Texas wanting one thing and one thing only. Barbecue. I went to Hays because I saw it on some best barbecue places in Texas list. I was disappointed. The food wasn't bad, but it wasn't phenomenal. The brisket was on the very border of being too dry and the meat lacked in flavor. I'm not one for drowning my meat in sauce, I like it to be packed with flavor from the get go, in each slice, and the brisket here wasn't that. Pricing was also surprisingly steep; you expect to see these kinds of prices in big cities in California, not off a highway in Texas.

Eh. Service was good. The employees were really nice.. the food was eh. It wasn’t bad, but it wasn’t amazing. Good not great is about as close as I can get. Brisket was tender. BBQ sauce had a nice flavor. The chicken was a bit dry and flavorless. The sausage tasted ok but was a weird texture. Not the best but also no the worse.

Stopped in here on the way to San Antonio due to other reviews. Let me say they were not lying. Some of the best barbecue I have had in a long time as well as their sides. I highly recommend the baked beans!!! Staff is friendly and the owner too!! Will definitely stop back by on the way home!!

The service is fast and efficient. I thought their sides were a bit lacking, however, I usually just get Cole slaw which they have. The brisket was tender and juicy but didn't quite have the smoke I like. Pork ribs were huge and well smoked and moist. The jalapeno cheddar sausage was also delicious. Love the sauce too. Thought I'd prefer the spicier one but the regular hit the right spot. Big space, lots of seating and parking, clean and well-run.

The brisket was so tender and juicy. The pork ribs were delicious and seasoned just right, not too peppery. The staff was friendly and patient as I stood there a little long trying to figure out what wanted. They have a great selection to choose from. The dining area is nice and roomy and clean.
