I took one star off for two reasons, but otherwise this was a good bird for the holiday (especially if you can’t decide between ham and turkey).
The first reason i marked it down is that nothing prepared me for what I was getting. Fully cooked this turkey remains pale pink. I’ve seen this before with some smoked meats or certain seasonings. If my thermometer hadn’t reassured me, I would have thought it was undercooked. The seasonings have a unique flavor, & and the consensus we arrived at was that it tasted like spicy ham. That was okay because our primary side was cheesy potatoes.
Second, the instructions are off. At 350 this bird would have to cook for nearly 3 hours to reach proper core temperature. I thawed it in the fridge for 6 days. 1hr in the preheated oven and the core temperature was 20 degrees. I turned the oven way up & cooked it for over an hour more trying to salvage the meal. Some of the intended sides served as appetizers instead.
Had I been more informed, I could have planned better. I’m writing this to save someone else the frustration.
The deep fried cajun spicy turkey was superb. Would recommend.
