    INSIDE THE SHACK

    This newly opened restaurant has delivered satisfaction to my New Orleans born and raised taste buds and palate. And the husband and wife owners will do the same for you if you are in search of that particular type of taste.

    Located inside what was the Shack the place is large and roomy and the service and attitude creates a most welcome time to enjoy some very tasty food.

    The menu provides selections that no other place in this great town has offered. May I advise that the French Bread is unique and it is the real thing. I was able to try some with the olive mix that is used for the Muffuletta. Over ate but it was worth it. Muffulettas are frequently enjoyed throughout New Orleans but are rare here in Nacogdoches. Well worth the effort to try one out.

    The Red Beans are acceptable although not perfect like the ones I do at home. One failure that will be easily corrected is the need to provide Tabasco Sauce. Some people also would like Crystal or Louisiana to spice up the dish.

    Gumbo was respectable with a good roux. Enjoyed a cup of the Seafood Gumbo. Would prefer a thicker roux but that is a matter of preference and does not detract from the enjoyment of this dish.

    There are so many tempting foods to try out but there is a limit to stomach size. In any case I proceeded forward with the Cajun Fried Po' Boy. This is offered with Shrimp, Oysters or Crayfish. Served with lettuce, tomatoes, and a homemade Remoulade Sauce.

    Again my heritage showed itself with a request that my Po' Boy be a Half and Half; that is Half Shrimp and Half Oysters. Of course as in any fine restaurant the customer's desires are fulfilled if possible. As they were without hesitation at Jethreaux's.

    The Shrimp Po' Boy of all the dishes tasted today knocked the ball out of the park with the bases already loaded. It was so satisfying that another one was ordered to deliver to my wife who was not with me. Scored points at home upon my arrival.

    It must be mentioned that there is always in New Orleans a discussion as to the proper spelling of the sandwich Po' Boy. It was a particular pleasure to see that the owners here have the delicacy spelled correctly.

    Something I did not try but would also highly recommend are the Pralines offered at the checkin counter. They are made by a vendor and appear to be scrumptious. This is another special item rarely seen outside the Crescent City. The only reason I did not get one is that my wife make Pralines for me at home. None will be better than the ones she make to keep my taste buds from revolting because of our move to Texas.

    Please note the proper pronunciation for this is prah-lean and not pray-lean! At least that is the way we do it where I come from.

    Jesse and Amy are the force behind this operation that has me very happy and I will be one of their regulars into the foreseeable future. Jethreaux's is a very different and unique Nacogdoches restaurant. Do give it a try and I predict you will be quite satisfied.
