That Cajun Place

Now the subject of Cajun food is about as controversial as Tex-Mex. That said, this is my take on what I had. Maybe I wasn’t born in a pirogue but I’m sure no couyon.
Seafood gumbo- good amount of meat given we’re a long way away from the GOM out here in Wink.
Roux- This is where the controversy can start. 🤣. For me, I like a slightly deeper roux but that’s just me. Their base wasn’t anything to toss out the window. A solid good medium.
Crawfish Étouffée- Another debated dish. Some lean more thin and buttery, some thicker flour. This leaned in the thicker direction. Plenty of tails in there, represents well.
Jalapeño cornbread- spot on.

Grabbed some red beans and rice to try this evening, will update.

Update:
The red beans and rice were great! Lots of good sausage, tender beans. Flavor profile was spot on. There can be a little variation in the flavor profile on this simplistic dish but they were well in the range. Generous portion!

Food is awesome! Staff was great! Would definitely recommend this place. I will be definitely coming back for a return trip!!

First time eating gator and boy oh boy it sure was good. Washed it down with good ole sweet tea. I didn't try the shrimp but I was told it was very good as well.
