A bowl of hot soup, noodles that melt in your mouth, and the ability to add what you want in your own bowl of noodles.
The soup was just the right amount of salty and light for the pallette. Adding each ingredient while the clay bowl is still hot to cook them is a unique experience.
We went to PAVO on a Friday night to try out its famous Cross the Bridge Noodles. We ordered that dish and another Spicy Beef Rice Noodle Soup. We liked both dishes and rate the spicy beef better than the cross bridge noodles.
The cross bridge noodle looked fancy and had great presentation. However, the broth was way too rich to our liking. I had a spoon of the soup and felt my entire lip was covered in lard. Maybe we weren’t supposed to drink that?
The spicy beef rice noodle soup was pretty good and it also had good presentation. On the other hand, it wasn’t anything special thus not surprising to us either.
Overall 3/5 due to personal taste. You may like it more or dislike it more. Only way to find out is to try it yourself.
We were there a little bit past 2pm on a Saturday. There was a waiting list. We were told that the waiting time would be 30 min but it was actually 15-20 min. It was acceptable.
The food was authentic and tasty. I had the rice noodle with sesame sauce and my husband had the rice noodle soup. Both were great. The chicken soup tasted well but the chicken was a little bit too dry. I love the rice pudding which is not sweet. The texture was unique and interesting, like a mixture of rice paste and mochi.

We came here on a Saturday at around 12:30PM. The wait for two people was about 40 minutes. We got seated at around 1:20PM.
My friend and I shared the two noodles on their menu and a marinated meat platter. We wanted to try the steam pot chicken but they only offer it for dinner during soft opening.
Both noodles were delicious, but the traditional one was more interesting/special and tasty. The broth was rich, flavorful, yet delighting. The marinated meat platter contained eggs, beef, tofu and was delicious too.
Our waiting staff was super nice and sweet. The service was attentive and fast. The price was really cheap too. For us it was about $18 per person before tip.
All I can say is wow... the ingredients are fresh.. the soup bowl comes with an instruction set on how to put the soup together so you get the best experience.
The appetizers we ordered crispy pork (pork belly fried), black fungus salad (nice vinaigrette and tai chillies), Braised Ribs with Plum Sauce (very good).
The Broth is a delicate chicken flavor in my opinion, lightly seasoned.. I had five spoonfuls of the broth before I decided to put some chili oil in to spice it up a bit. The noodles were soft and delicious.
