    Great bread-quality organic hard red wheat, at a very affordable price. I make sift-free cold-milled flour for breads and this grain provides all of the chew and more than you could possibly desire. If you stretch/fold/hook too long you will have an exceptionally tough crumb, 100% on its own whole-grain unsifted flour (with 20% rye starter). Sifting is a waste of time and of valuable vitamins, oils, and protein in the bran, but to avoid it you just need a high enough protein wheat grain to make you all of the chew you might want, which Halma's hard wheat very much does. They have other grains too, like buckwheat, rye, corn, mixed grains, also at remarkable prices. Ray and his family do a tremendous service to our community and providing it at a price 4-5 times lower than any other, bulk retailer or not. Thank you, Mr. and Mrs. Halma.
