In my opinion, they should never allow mods.
Gold Standard has decided that the way they serve each item is perfect in execution. If you want to go somewhere where they bend over backwards to please the masses, go there. If you have an allergy, that’s on you - go where they can accommodate you.
If you want the best damn breakfast sandwich, including a vegetarian AND a vegan option, grab a coffee from Reunion while you wait. And maybe order two because you’ll want another.
