The Piggy Shack BBQ (Food Truck)

I had the Pulled Pork Sandwich and fries and cannot stress how good it was. It’s now my go to food spot at 8th street market. My food was perfect, and it only took 5 minutes or so.

Thinking about shack? Just get it! No ragrets!!

Stopped on the way back from a kayak trip. BEST BEST bbq I have had in a long time. Looking forward to my next floating trip just so ican stop by and grab a bite!!

Best BBQ I've ever had. The pork belly is beyond good!

By far the best BBQ north of Johnson. These guys are awesome, very personable and actually know how to smoke meats correctly. The ribs are where I start at a BBQ place and The Piggy Shack passed the test that so far no one else locally has. Good flavorful dry rub and smoked over a low enough heat to smoke not cook like others tend to do. The ribs come out with a visible smoke ring, still moist and best of all they have a good “pull” to them. Those that talk about “fall off the bone” are actually exposing ribs that are incorrectly smoked as well as a lack of Q knowledge. The other standout is an amazing sausage they have custom made for them. Terrific smoked flavor with a nice bite that needs no sauce or bun to be enjoyed. Speaking of sauce that’s good too as are the sandwiches and a serious banana pudding.
