Wow, who would have thought this jewel would be in a small town along I-70. This restaurant would be competitive in any big city. If you can plan a road trip with a lunch or dinner stop in Burlington, CO, be sure to stop at The Dish Room. The chef has traveled the world and brought back inspiration for cocktails and dishes that are sure to please. There’s plenty of variety for anyone and even a kids menu. The wait staff is friendly and knowledge and the atmosphere, including outdoor dining and patio are appealing.

Best restaurant to stop at along I-70. Awesome! All around, yup, definitely worth stopping here. We were traveling and decided to stop for dinner. The owners are world travelers and know food! They have an awesome drink menu of special house cocktails and the food menu is just awesome. We ordered the butternut squash enchiladas and seafood pasta bake. The flavors they put together are so incredibly good! And the portion size is large as well.

The service was outstanding. We were seated promptly, the place is huge so lots of room, super attentive and friendly server, host and the whole kitten caboodle. We will make it a point to come back here when passing through again.

Passing through on our way to the east coast we stopped for lunch at the Dish Room. The restaurant, food, and people were fantastic. My wife had a beautiful black goat salad (contains no goat), while I had the summer time wrap with flash fried brussel sprouts. They had some incredible poppers for an appetizer that are much more fresh than you would find anywhere else. Although Burlington is a small, agricultural town, the Dish Room is more eclectic than you would think. One of my favorite restaurant finds ever. Not sure if I’ll ever be around Burlington again, but if I’m anywhere relatively close I’ll stop by.

    What a gem!
We found this place by chance, on a cross country road trip.
I had a beet salad, with added shrimp. It was top-notch. Phenomenally good. The service was gracious as well.
We will definitely remember to make this a stop anytime we drive through again.

Stopped here while I was passing through the area and oh my god when I say the butternut squash enchiladas are the best enchiladas I've ever had... THE NUTS? Adds so much texture! The red peppers on top add the perfect sweetness to go with the spice. And the sweet corn tamale is presented so beautifully. The entire kitchen staff I have feelings for you.
