First and foremost, I don't care if the service might be slow sometimes, the margaritas are a mix, or the food isn't perfect. Just like any place there are good and bad days! I'm just happy I didn't have to make the drink, wash the dishes, or make the food. (That's to all that have left one star reviews)
I've never had a bad or even mediocre experience. Food has always been on point and the service excellent.

We were in Louisville to shop the boutiques. Casa Del Sol looked appealing so we gave it try. I had chili rellenos. Les had a chimichanga. Both were great. I’m glad we tried it.
This is going to be a gem of a place, just a few edges that need to be refined, which is to be expected opening just a month ago.
Stopped in for a late lunch, very attentive service, immediately greeted and given menus. It took a bit to get silverware and napkins, but server corrected it without us mentioning it. The booths are spaced a bit too far, I felt like I had to sit on the edge of the booth to reach the table...easy enough changes to make and provide room for more tables. My other "complaint" was the water served, it's the not so tasty Louisville municipal water supply. Not the restaurant's fault, just plan on ordering a drink of some sort.
The food and drinks are exceptional quality and at an easy price point. We did margaritas, lime and strawberry, with strawberry far superior and tasting like fresh made strawberry puree!
We came just for tacos, but the the server recommended the "Sol dip" (queso fundido..esque). It was the highlight, SO GOOD! Great chorizo and blanco queso with hearty warm chips. We ordered tacos a la carte and we're quite tasty with the shrimp, barbacoa, and chorizo being our favorite. We ordered them with flour tortillas, but I would probably switch to corn next time, flour tortillas were a bit bland, but the flavor on the meats made up for it.
Overall a fantastic experience and a great addition to this town, looking forward to coming back
