I went to Jeju Noodle Bar with my family and it was a great experience.
Although we've been to this restaurant in the past, it looks like they update the menu from time to time, so it was definitely worth visiting again. The staff was amazing; everything was served quickly and they throughly explained each dish.

A couple of highlights out of what we ordered:

The fried chicken was delicious-it was crispy on the outside and super soft on the inside. It came with yogurt based sauce and some caviar.

One of my favorite dishes was the toro ssam bap. It was very delicious and yummy.

We tried a new dish, the Ja Jang style ribs. It was very juicy and soft. My family really liked it. We were all saying we wanted to try it again soon. It was one of the best ribs we’ve ever had.

The wagyu ramen was great as well. Since the meat comes undercooked, you can cook it in the broth to your desired level of doneness. We also tried the family style ramen. The broth was very tasty and deep in flavor. It was a more affordable option on the menu for anybody looking to experience Michelin star cooking without the extremely high price tag.

All in all, if you have an opportunity to get a reservation at this restaurant, you should visit right away! You really can't go wrong with any of the items on the menu.
One note is that you should make a reservation prior to visiting. We have seen some people turned away because they did not make a reservation.

As this is a Michelin star restaurant, I was expecting smaller but denser dishes, but this place has much larger portions than other Michelin restaurants I've been to, so be careful not to over order. I went with a group so we had 3 appetizers along with entrees for each of us. Everything was cooked just right, with the ribs falling off of the bone and the squid with just the right amount of chewiness. The truffle appetizer was surprising as it had a tangy kick from the pickled radishes. Entrees were also surprising with unexpected tastes, but in a good way. Staff is friendly and the ambience has music just loud enough to listen to, but not so loud that you can't have a conversation. The only downside is you'll need to get reservations with a group ahead of time as you can't walk in, so grab some friends to join you.

What a great meal at the first and only Michelin star noodle restaurant in the US. This isn’t a typical ramen restaurant, the dishes are innovative, different, and delicious. The staff are very friendly. The interior of the restaurant is very cozy. Would highly recommend!

Went here in December of 2020 and the food was amazing. All the dishes were extremely thought out with obvious attention to detail. This changed the way I view noodles. It’s mind blowing how they are able to take what most people thing of as “simple dishes” and transform them into art.

If this were a regular non Michelin restaurant with a bit cheaper prices I'd rate it hands down 5 stars. But it is a Michelin restaurant and as such 4 stars suits it. The service alone was amazing. The staff were attentive, friendly, and answered our questions along with advising us we might have ordered too much. The most amazing part of the meal for me was that the head Jeju chef (Chef Jane who is featured on a YouTube video) personally delivered a few of our appetizers and took the time to explain them to us. It helped really make the meal that much better. The appetizers were the best part of the meal and would highly recommend trying a variety from the menu. The noodle dishes were pretty darn good but at the same time there was nothing that stood out in them that struck me as amazing. The soju was really pricey (for soju standards) and had some.... Interesting flavors. The hand sanitizer at the door was a nice touch from the host but it did end up making my hands smell which distracted from the meal every time I took a bite. Overall, a good restaurant to try out. There's room for improvement but that's a good thing because it means I can go back later to see what has changed.
