This (relatively) hidden gem in Hillsborough, North Carolina has had a handful of James Beard nominations for a reason. The small menu changes every week, and the date is noted at the top of it, alongside the percentage of local, sustainable, and organic ingredients. The atmosphere is casual, the food is seriously good, and the prices are surprisingly reasonable. The only limitations are the fact that it is only open from Wednesday through Saturday for a few hours each night. I'd suggest calling ahead if having more than a couple of people in your party.
The atmosphere is very appealing but some days the menus can not be up to par for the price but anything else is amazing. The service is great! The food is great except for some off days. The price is a bit steep but is worth it if you want some great food.
My wife and I live down the Street from Pancuito and often come here on special occasions. Not only is the food locally raised, has tons of flavor and generous portion sizes, the staff are super friendly, knowledgable and the atmosphere is great. Definitely try their squid ink or butternut squash raviolis. The desserts are okay, but the main courses is where it's at. The country bread is also fantastic, but don't make a rookie mistake and fill up on it too quickly. They also have a wide selection of bourbons and can do a flight of a few them, which is a nice sampling in case you don't want to buy a bottle right out of the gate. Definitely recommend! They have something for everyone!

Panciuto is a place where your palate will be dazzled by wonderfully delicious Italian food inspired and driven by the local southern organic agriculture and livestock of the region. This is a place where the food/flavor, and wine pairings brought to the table is unachievable at home by my hands. Panciito = Amazing Italian Food!
