Consider the price you are paying (it's not expensive), the serving size (very decent) and the luck of having a genuine Thai food place on the outside of town.
The ingredients are all the same as the Downtown location; but the food cart is obviously not as dynamic for cooking.
Recent poor reviews that are saying the staffing and /or owners have changed are incorrect ; that is just not true.
ingredients have changed, staff for the better, and ownership looking forward in all ways.
regarding quality of food vrs "what thai food should be (while also considering the current staff) I can provide clarity here.
Time to cook, space to cook, genuine Thai style techniques and most importantly the ingredients sourced all play a huge roll in "what thai food should be" (at the highest level).
The current Thai "chef" there has over 20 years experience and has lived thai cooking to levels that are beyond reason. this chef can make any staple thai dish at or above the level any of the vendors or by reservation only eateries you will find around Chiangmai and Phuket.
anyways; Bend food service in general is crushing other places in Oregon... like ... let's say Hmmmm Corvallis for example.
Wonder how much the less than 5 star reviewers know about "Thai-ness"? And, how showing a little bit of understanding of thai culture, might make their ordering experience so much better.

Good Thai but inconsistent. We’ve been here a lot over the past couple years and most of the time it is great Thai food, we like their Crispy Garlic Chicken and Pineapple Shrimp Fried Rice the most, but other are good too. The only issue we have found with this food truck is their consistency; a few time we have gotten dishes that were not made the same as all the other we had, and were not as good.
