    You can tell that the owner / barista Rogelio is truly passionate about what he does–making great coffee with home made, plant based milk, he talks about the ingredients and process in length, he invites you to try samples, and he takes pride in being the slowest coffee in town. The passion and dedication definitely impressed me.

    On the other hand, he didn't wear a mask while talking and serving coffee at the height of the recent covid wave and his passion comes off as a little condescending. And yes, it definitely takes a while to get a coffee here. So overall, I don't think this is the coffee spot for everyone.

    I stumbled upon Pájaro a few weeks ago, and it’s become my favorite coffee spot. Besides the fact that the lattes (made with homemade nut milks) are delicious, Rogelio is super friendly and always good for conversation. Plus, everything is done with sustainability in mind. Stop by and you might discover that a vegan latte is your new favorite!

    So charming you'll forget you're in the city.
    To-go cups are glass mason jars.... No waste coming from this place. Delicious coffee made by a wonderfully interesting person.

    I tried and enjoyed their yummy mylk and mushroom blends this morning. The owners are personable and clearly care about the quality of their drinks. A unique small-cafe experience here and one that I plan to enjoy again soon.

    Eco-friendly, no waste coffee chop. The to-go cups are even mason jars! Would give it 6 stars if I could.
