All you need to know: he takes fresh albacore, soaks it in a garlic/black pepper marinade of his own creation, and then casually places it on the menu for true sushi aficionados to spot. You will not find this type of attention paid to most fish, let alone sushi on the west coast. And yet a diamond in the rough awaits you at Koibito.
