Pilot Project Brewing Milwaukee

This is our local haunt, so when it became Pilot Project Brewing we had to try it. Popped in for a drink and some apps. The sauce with the cheese curds is amazing. The batter for the cheese curds has cornmeal in it which lent an interesting texture that was a pleasant departure from typical cheese curds. The rosemary fries are great and appropriately served with mayo. The ribs had an excellent flavor but would benefit from the addition of a sticky sauce rather than an herb chimmichurri situation I think. The citrus passionate fruit booch was nice, pleasantly yeasty, and not too sweet at all.

Overall a solid and interesting start. I'm sure we will be back.

Gorgeous space & great brews! They have such a wide variety on the menu I recommend ordering a flight to start. Looking forward to trying the food the next time I’m in!

The beer at Pilot Project MKE is fantastic and the atmosphere is even better. Cmon, look at this place. Tons of space, perfect for big get togethers, catching up with friends, and great for families. There are so many beers on tap that I got two flights. I’ll be returning soon!

This is the best addition to Milwaukee! It’s such a beautiful space with a fun atmosphere, and the diversity of brews can’t be beat. We really enjoyed the food, too — much more elevated than your standard bar fare. Can’t wait to go back!
