Great Vegetarian Opitons, Quick and Tasty ????
My partner and I split a bowl of the combination pho and a combination banh mi (sandwich).
As a person of Vietnamese heritage and a huge lover of pho, I was a bit skeptical at first when I heard about this place. I mean, pho from a food truck? Never heard of that before!
Oh how could I have been more wrong with my skepticism.
The pho had a fantastic aroma. Different than your average bowl of pho, but not in a bad way. The soup was clear but still had a strong and unique fatty flavor. The beef balls were nice and tender, and the rest of the meats were cooked perfectly (except for the rare beef, which cooked in the soup).
The banh mi was also very tasty. It was missing some classic spreads, notably bretel butter and paté, but made up for it with its unique meat choices.
All in all, if you're looking for a quick bite down the highway, take a pit stop at Pho Vientiane! Very tasty food and the soup is fantastic for a food truck!

Went here as it was just around the corner from where we were staying. Chef was very friendly and took about 10 minutes to cook up fresh. Prices were very reasonable and was surprised and how much he gave me for the Pho orders. One order fills a whole bag as everything is separate until your ready to eat it since I got it to go. They give you fresh spices, sprouts and sauces to add as you like along with broth and noodles. Flavour of the broth was probably the best I've had to date. Was so much I couldn't Finnish it all at once. You can't miss this place if you're in the area.
Pulled up and was a bit skeptical because food truck. We'll, it's very good. We ordered combination pho, seafood pho, and two combo sandwiches. The sandwiches were really good, with fresh crusty bread. Broth for the pho was also very good. Bonus...there's a shop 50' away that sells young, fresh coconut. Seating is under an awning, but it's Hawaii so very pleasant. Definitely recommended.
