Christine, because I read your review, I went to Baldy's. Good BBQ is not supposed to fall apart. Nor is it supposed to fall off the bone any more than steak is supposed to fall off the bone. So because of your review I went to Baldy's. Thanks for the heads up. It was incredible! The brisket was unlike any I've ever had. Even my 20-something daughter looked at me and said, "this is way beyond anything I've ever tasted." (We found out they're using PRIME brisket.) The ribs were incredible. They did not fall off the bone. Nope, that's chain restaurant "boiled in a bag" stuff. Baldy's ribs tasted like something out of a national competition. Perfect smoke ring. Perfect texture. Wonderful taste, especially if you're a rib lover. I generally don't even like ribs. But these were nuts. The baked beans were WOW! Crazy good. And the cheesy potatoes excellent, although I agree with Christine, they could have been a little warmer. Personally, I liked Baldy's BBQ sauces, especially the cherry one, although I understand that's kind of a personal taste thing with everyone. Each to his/her own. The only problem with Baldy's is that I'm not near enough to enjoy it very often. So I find myself comparing my old BBQ place to Baldy's. But there is no comparison. So be careful. Once you try Baldy's it's hard to go back and like your old BBQ place anymore.
Pit-master George and the team have brought a top notch product to Saugatuck. You can tell they are using some of the best products out there. Perfectly cooked chicken, pulled pork from the entire pig, premium ribs and USDA prime graded brisket. Their sides are great as well. Cheesy potatoes and baked beans are a classic, try the kimchi slaw for a unique side...highly recommend it!
