“I’ve lived in NM for a majority of my life and granted I haven’t for some time, This is the best pizza I’ve ever had in this state; hands down. Heck, it’s even good in regards to pizza I’ve had in the rest of the world. I had a good long discussion with the owner/family about their techniques and they were surprised by my knowledge level. They prefer a biga preferment for their dough which adds an amazing depth of flavor to their crust. Wood fired at 900° to give that little bit of char on the bottom. They do use a 65-70% (estimated by the texture feel) hydration so if you’re expecting a crispy slice that has zero flop, this isn’t it. Im not saying that as bad thing though. Their sauce was on point, not to sweet or bland. It added excellent flavor to the overall pie. The one fault I will give it is the cheese they used. It was full fat, which is good, but unfortunately using 100% full fat mozz generally makes for a pretty greasy slice. Though it could have been exacerbated by the pepps, it was still noticeable. BUT HEY, it’s pizza. Some of that is expected. This is a solid pizza that shouldn’t be skipped. However their hours are somewhat bonkers and inconsistent. 11-3pm/4pm is kinda hard for people to make so you’ll have to take a special trip. Not something you can pick up on your way home for dinner..”

I also ordered a bacon egg cheese burrito and the flavor was good… needed a little kick of salsa with it. “Phenomenal place!! Definitely a popular spot in Santa Fe, there was a little bit of a wait. The place felt alive with energy, the chef was walking around and talking to the tables, which always solidifies the feeling of community and care. Crab cakes and fermented drink were amazing to start, tried the beef kebabs and the combo platter with the chicken, lamb and goat curries, and ended with the coconut cardamom flan. One of the best meals I've had!! If you're in town, make sure it's something you hit. Everything was full of flavor.”

They were kind, patient, and above all else truly honest about the portion size. We would have ordered way too much food. The portions are big especially talking about paella. Menu states that paella should be shared by two people, but five of us ladies shared it because its big. I did not particularly care about paella, the taste was off for me but maybe it's just me. Hence, the 4 stars. The blood sausage was unbelievably tasty. And the potato tapas were amazing. The house sangria was the bomb!”

“We chose this place at random just to get green chile as we passed through New Mexico, and it ended up being one of the better places we ate in NM. We also tried their chicken taco and meat burrito. Both tasted best with the green chile. The taco shells were fried and added really nice texture to the bite. I think the chicken could be a little bit more moist, but not a deal breaker. They included a small packet of salt with the taco in case you'd like it saltier. The meat burrito is literally just full of meat, which is great value. If this was in my home town, I'd keep coming back here.”

They seem to be short-handed, and seems that the last two times I've been there, one person is making sandwiches and ringing customers up at the cash register, and no one is cleaning up. They have added some additional drink choices, but it's not labeled, so not sure what they are.”
