    I've always been a huge fan of the unique flavors in Evolve chocolates, and I've been so excited to visit the cafe since they've opened. I finally got to go, and it's everything you could want - rich and balanced flavors, tasty pastries, excellent coffee. I can't wait to go for one of their dinners. This chef has a knack for creating really special flavor combinations, definitely a culinary experience not to be missed!

    Went for the first time at new location for a beer pairing dinner inspired by a book. The food was excellent. The space was lovely. The chef is awesome and the staff are friendly and helpful. 100% worth a visit. I would say the menu I was lucky to try isn't a standard offering but certainly indicative of the talent and quality offered here.

    Great vegetarian/vegan options. My husband and I loved our meal at Evolve SO much that we went up to the counter specifically to compliment the chef before going back to the book store. Oh and of course we had to buy some pastries too, which were equally excellent. We had a salad, soup, polenta bowl, and lentil hand pie, and all were amazing. So richly flavorful and creative. I wish we had time to visit again during our time in Bellingham. Highly recommended!

    My Brother and wife drove up from LA area to do a short visit. They wanted a fine top of the line meal. I avoided the harbor, and picked this. I know the two wonderful ladies that own and run it. We made an easy reservation for the 5:15 seeing of the Prefix Dinner. We'll right off it started to blow us away. Stunning high views of the water. Custom designed and locally made decor everywhere in great taste. But not over the top. They obviously focus on the food first.. And Delivered more than expected for each course. The pairing of the beer was spot on. Each course was perfectly served at proper temperature and intervals as our waiter was supper attentive and helpful. The local food used was totally fresh with a delicate but distinctive balance of flavors. Each course was just making us lean back and say "Oh My!" it melted in your mouth, and for the money it was a really great deal. The main course that night was a fish that just came in from the fishing boat they use. Flakey, perfect clear meat and so fresh. The other choice was a really fabulous mushroom dish.. Again locally sourced, exquisite flavor and the Presentation hit the mark too. For dessert we all were shocked at the shortbread cookies.. The melted in your mouth.. Just enough firmness to pick up, and as you bit into it the flavor was again perfect and at the right level. The fruit compote (I forget, we kept eating and enjoying it.. So took no notes) again was a perfect foil to the cookie and at the same time in harmony with the entire meal. Bravo to the owners (one is the chef), the entire staff, and to a perfect stunning meal for my family who I had not seen for 15 years. You all made it a perfect trip to remember for a lifetime. The are already talking about canceling another trip and coming back to this area.. For more food to enjoy and our fruitful region.

    This is a wonderful little cafe nestled away on the second floor of Village Books. Entrees revolve around a variety of soups, salads and dishes that lean toward middle-eastern cuisine, but they also prepare some yummy looking sandwiches. Evolve also features a coffee bar, wonderful desserts and pastries and, the name says it all, chocolate!

    Chocolate, Coffee, Desserts, Pastries, Sandwiches, Wine, Salads, Soups, Wine and Sandwiches -- all prepared fresh, primarily from locally sourced ingredients in a world-class, independent bookstore with a view "to die for!"
