My wife and I LOVE mac and cheese. We got married on National Mac and Cheese day. We collect mac and cheese cookbooks, and try our hand at cooking fancy mac and cheeses. And we occasionally go on road-trips, specifically to try out mac and cheese restaurants in other states. It may seem a little cheesy (haha) but it's a pretty fun way to experience how other people interpret a deceptively simple dish while visiting new states.
We had the good fortune to try out BigWife's Mac n' Cheese on their first day of business. While their brick-and-mortar location wasn't fully ready, they had a food truck parked outside, preparing their dishes. Each one was expertly done! The Classic Mac was practically a love letter to White Cheddar. The noodles were cooked perfectly, and the sauce was thick, and creamy, and beautifully cheesy. The Mac Lorraine had delightful chunks of bacon in there, with a Gruyère cheese sauce that perfectly complemented the bacon, and the mixed-in scallions imparted a subtly oniony bite that cut the richness of the rest of the dish.
Some places make Mac and Cheese, because it's a simple dish to do an adequate job with. And some places make Mac and Cheese because they absolutely love the dish. BigWife's Mac n' Cheese is clearly the latter, and I wish them all the best. I only wish you were opening closer to us!
