The casserole has an incredible assortment of tasty meats and beans, perfectly crispy duck confit. I can't wait to try everything else on their menu. Our first meal was the grilled cheese, an creative blend of cheeses and a side of the best fries in Cold Spring. There's plenty of parking if you're visiting from out of town and would like to get take out for your AirBnB instead of dealing with crowds in the village. Seating is limited indoors.”

“The Foundry is just a great place. Even though it was afternoon, we asked if we could have an Omelette, and they said sure. The Omelette was cooked perfectly, and the side portions of Potatoes was more that adequate. The potatoes were cooked to a golden brown, just the way they should be. Also it came with butter and Jelly for the side of toast. As of 6/24/19, the Foundry Cafe is now cooking their Home Fries with just a dash of Rosemary. The Rosemary gives the Home Fries a whole different level of flavor. I have never had home fries this good! The coffee here is always fresh, as they grind their beans here, in front of you, and the coffee is never bitter. Our waitress Sharron will greet you with a big welcome, and smile! No shrinking violet here! Sharron is part of the charm of this place. Also the Foundry Cafe is a NO CELL PHONE ZONE! Talk among yourselves. The Foundry Cafe is decorated with paintings by George Stevenson, a local artist, who has received great reviews in the NYC Art World.”

It’s also located right near the train station so you can take a train ride down to the city. The rooms were nice and clean. The staff was super friendly and helpful. They are an asset to Cold Spring and they make healthy but delicious meals and salads. They sell everything from tuna, chicken, pasts, fruit, bean salads, to sandwiches, soups, muffins & more. “A delightful gem in the quaint Cold Spring neighborhood. Coming from NYC and being a vegetarian, I’m always on the lookout for farm-fresh, quality eateries when I venture outside my stomping ground. I was very happy with the foods, flavors, and service at Hudson Hil’s. My boyfriend and I ordered omelets and split lemon ricotta pancakes. No one thing stood out to warrant a 5-star review, but it was perfect enough for us and our needs the day we visited. Would recommend.”
