The breakfast sandwiches are comparable to the ones we had in Paris, soft bread, perfect eggs, delicious cheese. Of course it's pricier than your usual cafe, but it's aspen. “Oh my goodness! Best macaroons and baklava EVER! We bought 5 more macaroons and 4 baklava to take home to share with family that weren't with us. I got the matcha latte with lavender syrup. Yum! “Went out for breakfast. Like most places in these small towns we have out here in Colorado its a walk in and find a seat kinda joint. The menu is just right not to big not to small a good selection of whatever you might be in the mood for. Service is the best, Micheal Dean makes sure you feel like family when you visit. Food was served fast with local fresh options to add, meal was delicious and i will definitely be going back to try anything else on the menu i can. Would recommend for any group. And also check out the items he has for sale around the store local vendors as well as his own skill at pottery. Prices are unbeatable.”

Didn't go terribly late but they were out of many breakfast items already, so I guess the takeaway is get there early! Loved my smoothie bowl and spiced latte. Great honor system for coffee. Would be helpful to have some clearer signage about where to queue, put dirty dishes, etc. Out of the several dozen people who came through or were working there while we stayed and ate, only 1-2 besides us were masked. Didn't seem like a political choice, but a heads up if you have concerns.”

Solar Roast is a fun place to just sit and soak up downtown, especially if it is nice enough to sit outside. They also have a unique, impactful mission, using solar energy to roast their coffee.
